I’m addicted to this ramen soup and would like to know how to replicate the broth with less sodium? Any ideas?
Try reduced sodium tamari. Its about half the sodium and all soy bean (no wheat) so the flavor is a bit stronger too.
The kikkoman reduced sodium tamari isnt bad actually. IIRC is under 500mg per tbs.
Use sardine/kombu/onion dashi and gochugaru as the base for the stock. Riken sells a no salt or MSG added dashi powder. I use it all the time for reducing sodium and its taste great.
