      Since I taste the kimchi burger at Lotteria in Seoul, I experimented with different ingredients and finally found the perfect combo that I like.

      200g lean ground beef
      250g ground pork
      1 large onion, minced
      3 cloves garlic, minced
      1/4 cup bread crumb
      1 cup very well fermented kimchi, roughly chopped
      2 tablespoon gochujang (red pepper paste)
      1-2 teaspoon brown sugar
      1. Season kimchi with gochujang and brown sugar, set aside.
      2. Mix all the meat season with a pinch of black pepper, onion & garlic. Add seasoned kimchi & breadcrumb. Then form into patties of 75g each and allow to rest in refrigerator for min 1-8 hours to set.
      3. Grill and serve with bacon and cheese. Top with mayonnaise mix with some samjang.

      Hmmm, i may have to modify this one slightly for a meat loaf.
