I bought a Komax Biokips 11.5L container today at H-Mart and am using it to ferment kimchi. On the top there is a knob with 1-12, im assuming its an air release valve. What should that be set to? Also, im assuming you can just let that sit on the counter out of light, but open to any recommendations if it should be placed elsewhere.

I thought the same, but I think it might be a calendar dial to keep track of what month you made it?
