Hi all! I made my second batch of kimchi this week, roughly 2 gallons yield. I realized (2 days after making it) I completely forgot to put the rice porridge into the base. I checked on the kimchi today (in pantry between 72°-75°) and there are bubbles, so something is definitely happening. The question I have is how much will this affect the batch? Was this a big enough ‘whoops’ to scrap the batch? Will the flavor be affected? My last batch I let sit for a week at room temperature and it was absolutely delicious. Will I just need to let this sit longer? Many thanks for any insight!

Yay! Something is definitely happing! : ) Don’t worry much about rice porridge. It sounds like your kimchi is being well fermented!

I make kimchi all the time without the rice porridge. Works fine. I normally dont let mine sit out for longer than 3 days. Cooler room temperature will take longer. Then it goes in the fridge for at least a couple weeks before sampling it.
Just make sure it smells sour before putting it in the fridge. After a month it starts getting much better but i like old kimchi best.
