I followed Maangchi’s recipe for Korean pickles exactly but 2 weeks later when I tasted them they were bitter! Has that happened to anyone else?

KV, did you use Kosher salt (non-iodized)? Is your vinegar 5% acidity?

Or have you used diet salt? Potassium chloride tastes bitter!

I used regular kosher salt and pickling cucumbers

And yes, vinegar and water mixture was at 5% acidity.

KV did you taste the pickles prior to pickling? Sometimes the cucumbers themselves are just bitter. Also, I saw an article online posted by someone who said her pickles were bitter and the bitterness faded in time…

I had used some of the cucumbers for a salad. So yes, I did taste the cucumbers.
I’m going to do it all over again and see what happens.
