Hello,
I would like to know if the side dishes are prepared in larger amounts or if the are prepared daily? And if prepared ahead of time, how long can you keep them in the fridge?
I would like to make couple of side dishes to have available with each meal,but not sure how to go about it.
Any suggestions would be appreciated.

Most Kimchis are good for a long time if kept in a proper container (leftovers in a serving-dish should be used within a few days, even when kept in the fridge).
Soysauce-based dishes based on vegetables keep pretty long, too – especially when vinegar is involved.
Exceptions apply – watery vegetables like zucchini and cucumbers don’t keep that long, a few days at most.
Meat and fish etc.- well, there are some recipes which involve much salt to preserve them, but when in doubt: freeze early or discard.
Preparing the dishes a few days beforehand is no problem mostly, some even improve that way. Properly kept (cool), of course!Bye, Sanne.
