Hello!
So, one of my first batch that I kept on the balcony at rather low temp has gone bad after 1.5 months. The cabbage has no crisp and tastes awful :(
I don’t know why this happened, shouldn’t kimchi last forever and even get better with age? What can I do to prevent this, while also have batches that will last for months?

Was it out on the balcony the entire 1.5 months? Whats the temperature outside been out there? You probably should have moved it to a refrigerator after a few days of fermenting.

You should have kept your kimchi in the fridge. The kimchi from my recipe is not very salty, so it will go soggy or bad if you don’t keep it in the fridge. In old days when refrigerators were not available, we used to make kimchi really salty so that it won’t start fermenting quickly. haha! thanks for the response…well it was on the balcony bt it was winter here so 5-6degrees Celsius similar to refrigerator…but in the last 2 weeks it’s been more like 10-11 as spring came. Ok! thanks a lot of the advice, i’ll store them in the refrigerator faster from now on!!
