      Hello, I just made my first batch of kimchi! It was so much fun! I used Maangchi’s easy recipe and halved it. It is currently standing in my ~20°C kitchen to ferment. Once it’s been standing on the kitchen counter for 24h I will move it into the fridge.

      I did not have fish sauce so I used soy sauce, and I did not have radish so I used carrots. To add a fishy flavour I blended a small piece of salmon and added it to the kimchi paste. Maybe I went a bit crazy on the garlic, I put a whole head of garlic into my kimchi paste! I wasn’t sure how much garlic I should put in so I just added the entire head of garlic, haha!

      I now have about half of the kimchi paste left, so I’m thinking about buying more cabbage today and making even more kimchi :)

      I love Kimchi! Been eating it every since forever. I always buy kimchi at the supermarket but it was getting expensive and I really wanted to explode making homemade kimchi. Boy was that fun! So now my kimchi is fermenting in the fridge. :D
