I made kimchi this past weekend, and I made so many mistakes, starting with over-salting my veg, then it’s too hot. Is there any way to correct this?
Once its made its difficult, but one thing i have seen done with kids and was done with me is rising it with water a bit before using it in cooking. I wouldnt eat it as is if it was too salty, but it is good for cooking with, just dont add extra salt or chili. Kimchi Jiggae would be nice to try. Next time you make kimchi just rinse the cabbage really really well and use less fish sauce/soy sauce and reduce pepper. Also taste it before you ferment it for seasoning. hope this helps. Happy cooking.
