Hello Maangchi, and Maangchi fans!
I am having some trouble with my Kimchi. (its my first time making kimchi).
Today i decided to try my 4 days old kimchi, once i took a bite i felt the dryness from the pepper flakes, and a bit of a bitter after taste. (I think its from the pepper flakes, but i am not sure).
Kimchi making process:
I soaked the kimchi over night, then rinsed of the water without squeezing ALL the water out so it had a little moisture when i applied the paste.
Then I letting the kimchi sit in room temperature for 3 days, and at the moment it have been sitting in my fridge for 1 day.
Visually it seems like that the pepper flakes is quite thick. but when i was fermenting in room temperature it was quite juicy, but still the pepper flake paste seem to be thick.
Is the any way to save my Kimchi? or do i just have to ferment it for a few more days?
Thanks=)

Your kimchi looks good to me. While it fermented some liquid came out of the cabbage. Don’t worry, just press the cabbage down into the brine so it’s not separated.
