Hi Maangchi,
After over a year of working from home due to lockdown, I will be returning to the office in January. I work 9-hour days and will also commute for 2 hours per day on top of this, so I’ll be really tired and won’t have much free time. However, I want to learn to make nutritious lunchbox meals for myself during this time.
Could you help me with some ideas for vegetarian dosirak that would be quick and easy for me to make? I have a hard time with meal planning and figuring out what foods work well together.
Anything that can be prepared in advance, frozen or stored for a long time would be a big help!

I’m pescetarian and my Korean mom makes me japchae and green onion pancakes all the time and gives it to me frozen. I just stir-fry/pan fry it again to eat. Super quick and easy when I’m busy. I used to pack it to work over rice as well!
