      I’ve become addicted to an extremely hot salad kimchee at a chinese buffet about 30 miles away and probably make at least one trip a week, usually two for lunch. Originally having only fleck of chili, it’s characterized by their use of small red chilies and later sliced jalapenos. These have been recently added in progressively increasing amounts over time. They have a lot of South American cooks, and I think they have been modifying the recipe. A few years ago I had found recipe that I loved and ate it every day, but something happened bad and I suspect a fish sauce change caused it. Then I found this source, and they got me liking the increased heat. It’s pretty sweet, but with little apparent notice of sour or flavoring. It’s very crisp. and I suspect not treated with salt to draw water, but it may have been salted.
