Hello everyone.
Has anybody here ever tried to use a rice substitute like cauliflower rice in a bibimbap recipie? I have diabetes and white rice of all things really spikes my glucose levels. I have thought of using cauliflower but i figured someone else might have already tried it. Thanks and hope to hear from you. - March 1, 2020 at 8:30 am #86395Janet-RidgefieldParticipant
Hi, have you tried Right Rice? It’s made of various higher protein, lower carb beans and stuff, and is pretty good! You might try that. Supposed to be better for glucose. There are favored but also an Original version. I think it might work. Just a thought.

Brown basmatti is much lower on the GI than any other rice.

Hey,
I havent tried cauliflower yet in bibimbap buit in fried rice and it was good alas it tends to be wetter than rice.
After shredding it, it should be squeezed out in a cheese cloth if possible. Also never use frozen cauliflower that is super wet.

I don’t know about glucose, but maybe there are varieties of rice specially for you? Have you tried any of these?
