Hi, I realize that kimchi is fermented cabbage or vegetable and as such should not go bad, but rather get more sour…but, I have some store bought kimchi which has completely changed color in the jar. Do you think it is still good to eat?

No, at room temperature kimchi can last about 1 week and its taste does not change, so it’s ok to buy kimchi from the store.

I had Kimchi go bad before. It got Moldy. It can also get very sour. Moderately sour one goes into soup. By the time it gets very sour, they are no longer crunchy. I’ve been making mine in smaller batches.

All of the store bought kimchi’s I had was able to get bad. My self made kimchi is still good, even after 2 years😟

Hey there! Yeah, kimchi can usually last quite a while, although if it’s changed color it’s definitely worth being careful! Depending on how it smells, it could still be alright. You could always give it a taste to decide if it’s still ok. Hope that helps!

if it changed color, it definitely went bad. you will know by the taste of it. Try storing it in the refrigerator.
