I made cabbage kimchi and let it sit for about 6 days. When i went to put it in the fridge i notice there was a ton of water/juice in the container. Waaay more than the first time i made kimchi. Is that bad? Should i dump out some of the liquid?
Piccollob12,
My suggestion would be to save the excess kimchi juice in a jar. Last time I made kimchi, I had a lot of liquid left over so I saved the excess in a jar. I use it when I make kimchi pancakes or other recipes that require kimchi juice. By the way my kimchi turned out just fine…the extra juice did not signify any problem with the kimchi.
I hope this helps.
Dave
Awesome thanks Dave!! I live in korea and the cabbages i can get at the market are huge and the leave are petty thick. Two heads weighed ten pounds. I think the thick leave contributed to the excess liquid. I feel much better now, thanks for the reply,
