      Is there such thing as too much onion in kimchi? So this was my first time making kimchi. I used a 4lb napa cabbage, 2 medium onions, 2 large bulbs of garlic, 2 inch piece of ginger, 1/2 korean pear, and 1/4 cup fish sauce. I’m not sure what the paste is supposed to taste like but it was very strong. Like my breath just reeks of garlic and onion. Is that normal? Did I ruin my kimchi?

      Definitely! Even if you’re an onion lover like me, it’s definitely possible to have a bit too much. Too much onion can overpower the other flavors in the kimchi, and the end result can be a bit too pungent.

      I personally like more onion in my kimchi. If you think its too much, you can incorporate it into recipes like kimchi fried rice, or noodles, it will taste absolutely delicious.
