amikurotsuchiParticipantYes..I always taste the paste and the napa cabbage as well. I taste the napa cabbage after rinsing it cos if it turns out too salty then ill wash it again. As for the paste, my husband likes his kimchi less hot and I like my kimchi real hot :) so of course I have to taste it and i dont use measurement. The point is kimchi is not supposed to be sweet though we add sugar in it.
As for iodized salt.. I just made a batch of kimchi with it (Coarse iodized salt not the fine one) and it didnt spoil even I left it outside for 2-3 days in the hot Jakarta summer and it tasted just as kimchi supposed to taste.
amikurotsuchiParticipantHi Maangchi :) I would like to thank you for making this absolutely fantastic site. I came across this site while browsing for Kimchi recipe. I am totally crazy about Kimchi not only because it is superbly yummy but it is also very healthy. But the thing is..the price of good Kimchi in the stores are high. I mean it’s rather insane lol even more pricey than a bowl of Dolsot -_- so I reckon I just gotta stop buying and start making. I just finished making it and my 4,5yo daughter put her finger in the jar to taste the paste and said “Mi, it’s real hot but it’s very yummy” I asked her whether it taste better than the one in the plastic bag and she giggled saying DEFINITELY :D oh that is so rewarding..
Oh if only i had found your site sooner..i could’ve saved lotsa money lol :D

I love Korean food so much and the ingredients to make them is abundant here since I live in Jakarta, Indonesia, I like your site a lot I bookmarked it in my laptop and also my Blackberry so I can even read it on the go YAY! :)
