    I know this is over a year old but I had to chime in because there are many more ways to eat duck in Korea, from ori bossam (like the pork dish, with duck) to yuhwang ori (sulfur duck). The best though is hunje ori (smoked duck). In our town, which Seolites consider the countryside full of bumbkins, there were several smoked duck places, all with the same setup: outdoor smoker, using oak, then grilled alongside the optional Jeju Heuk Dwaeji (litterly “dirt pig” from Jeju).

    Hunje ori was the default dish for duck in Ulsan. When ever a co-teacher would say, “Ori mogolo galeyo?” this was the dish they were suggesting.
