I just keep dried kelp in the pantry, sealed. It lasts a long time. Roasted seaweed for wrapping around rice will get stale and lose its crispness after a day once the package is opened. Still safe to eat.. just not as good.
minaParticipantIt should be salty enough for flavour, not too salty. If you guys like it and there’s no issues with fermentation/moulding then I think your kimchi is good!
minaParticipanthej anna, i know several good stores here.

the ones listed here under copenhagen are the best. there is also a smaller shop of den kinesiske købmand in torvehallerne, the new market by nørreport station. babali market is also good in vesterbro, they have a lot of nice frozen mandu options. my friends in amager tell me that vietnam supermarked is pretty good too, but i haven’t been there myself.
happy hunting. ^^
minaParticipantwelcome, anna! i am living in copenhagen, where there are 3 korean restaurants but none are up to my standard. best to just make it at home anyway. (;
minaParticipantyou are probably thinking about hobak juk. maangchi has already posted the recipe. (:
minaParticipanthej, ikoma!
i also live in denmark. in copenhagen there are 3 main shops i get my korean ingredients from, but the red pepper flakes are around 50kr… usually i wait until i visit california and then i buy 3 or 4 packs. ^^;

minaParticipantsukju namul? was it mung bean sprouts? if so, i think you can prepare them the same way as soybean sprouts. maangchi’s recipe is here under the kimchi chigae instructions. (:
