I think you may need to add more kimchi next time or fish sauce? First time I made it, it was not salty enough to my taste so next time I just added more kimchi and fish sauce and salt.
rXcanadensisMemberOh and as an appetizer you could serve a seafood pancake, it is delicious!
rXcanadensisMemberMost Korean restaurants here serve meals that include a salad, rice porridge and the main course accompanied with plain rice and maybe at least 5 different side dishes (e. g. : cabbage kimchi, ponytail radish kimchi, spinach, soybean sprouts, stirfried dried anchovies, black beans, potatoes, zucchini, etc.)
rXcanadensisMemberThe easiest Korean dish I know that uses hot pepper paste is the kimchi stew. I’m pretty sure you could use this paste anywhere you would add chilies. There’s gochujang in almost every recipe on this website! ;)
rXcanadensisMemberIt’s a little bit late to reply, but I think you could use anykind of pork meat no? Something like pork loin or maybe chopped spare ribs. Are there any rules for kimchi chigae anyway?
