stanfordParticipantWhat is it made of? And does it have a lid?
stanfordParticipantHi Tanis, welcome!
There are quite a few threads already about this topic, here are a couple:
I don’t know what the weather is like there in the summer, but perilla leaves like it hot and sunny.
stanfordParticipantIt should, eventually. You could even leave it outside the fridge for it to happen faster. Just be sure to keep an eye on it.
stanfordParticipantWelcome aboard!
Is the meat still attached to the bone?
And is this your family’s own way of doing it, or are others doing that too?stanfordParticipantIt’s great as a side dish to rice.
stanfordParticipantDo you mean jin-ganjang Sempio soy sauce in the red bottle? It doesn’t have MSG.
stanfordParticipantAlso Stee – how cold is your house? I think you want to try to ferment it at about 24 degrees if possible.
stanfordParticipantYeah for spicy kimchi you really need to get the spices in constant contact with the vegetables — in water kimchi, they sit in, well, water.
Banana? Really? Interesting.
stanfordParticipantApparently Kosher salt and sea salt have impurities that are hard to taste but are beneficial to fermentation. Were you using table salt all this time? That might have been contributing to the bleach-like taste.
stanfordParticipantIt can keep a long, long time, if you store it in the fridge.
stanfordParticipanthelenhelen it sounds to me like your kimchi is fermenting perfectly. When it’s fizzy that means everything is going well.
stanfordParticipantYes, even if the container is airtight, you should probably let some air in there now and then.
stanfordParticipantI guess that earlier rumor on soompi.com was wrong, it is indeed in NJ this year:
