"Hi Maangchi, My wife and I love kimchi bokkeumbap. My wife spent a year living in South Korea about ten years ago and learned how to make a version of this recipe. We use marinated chicken breast (similar to bulgogi), and we create a well of mozzerella in the middle that can melt inside the crispy rice. We love it!"
