      I just made a new batch of kimchi and was wanting to preserve the fresh taste for as long as possible. I still want fermented kimchi later on, but I was hoping to slow down the process by refrigerating it immediately rather than leaving it out on the counter. Does anyone else do this? Will it impact the taste or texture later on?

      I do it that way and only leave a small batch outside for “immediate” use. No problem.
