Hi all i cant get hold of any of the traditional korean earthen ware for fermenting. any help with what else i could use? all tips and tricks welcome ..

I use a Schmitt fermenting crock that I found on Amazon. It comes with weights to keep the kimchi under the liquid and it has a lid that keeps air out using water that makes an air seal that allows gas out but prevents air entering. Works very good. You might also try an e-jen fermentation & storage container by Crazy korean Cooking. It has an inner seal that presses down to the surface of your kimchi, keeping air from entering. I have had excellent success with both containers.

Do you know if the onggi crocks are what they bury in the garden? I visited Korea once and saw the crocks in the garden. Since onggi is porous I wasn’t sure if they would work. I’m very interested in outdoor food storage in cooler months of the year.

Yes, the onggi crocks can be buried in the ground after it has been fermented for a few days. You bury it so the lid is just above ground level and then cover with a thick layer of straw to insulate it.

How about trying a traditional ddukbaegi instead? It’s super yummy and nice if you want to switch things up!
