I have a potluck tomorrow and want to make the Japchae for 15 people. Do I just double the recipe out Maanghi’s cookbook and I’m making it a vegetarian Japchae. Can I use 14 dried shitake mushrooms to intensefy flavor and other mushrooms as I’m not using meat.
