    hi,
    I had make kimchi abt 1 wk ago and it tasted bitter so I tot the bitterness might go away after fermentation. However the bitterness is still there after 1 wk when I eat it without cooking. I tried cooking it with a piece of slightly marinated beef rack yesterday and it tasted heavenly. So im nt sure where it exactly went wrong. Cn sm1 help me on this?

    Ive had the same thing happen. It tends to go away with time or if cooked.

    Were you using nappa or another kind of cabbage?

      I used napa cabbage for the kimchi but instead of using korean radish, i used chinese green radish. I was wondering if i had put in too much of ginger.
