Sweet and Spicy Yam Stir-Fry (Vegan/GF)
Friends have really been liking this dish,
so I thought I’d share the recipe :(1) Medium Size Yam, peeled and cut into cubes (1/2″ or so)
(2) Scallions, thin sliced into rings, separate whites & greens
(1) Tbs Gochujang ( https://en.wikipedia.org/wiki/Gochujang )
(1) Tbs Leatherwood Honey (or other fragrant type honey)
( https://en.wikipedia.org/wiki/Eucryphia_lucida )
(1) Organic Lemon (Zest it completely first, then juice it)
(1) Tbs Oil (I use peanut oil generally, your choice)
(1) Tsp Sesame seeds (toasted lightly)Mix the Gochujang, honey, lemon zest, & lemon juice in a bowl.
Add the oil to your pan and pan fry the yams over medium heat until almost cooked to your liking (~about 15 minutes).
Add the Scallion whites, and fry a minute more, then turn the heat down to low. Add the Gochujang mixture and fry another few minutes over low heat until it “sticks” to the yams.
Transfer to a serving dish and dress with the remaining scallion greens and the toasted sesame seeds. This dish is “spicy/sweet” and makes a great side dish for most any meal. Enjoy!
