Maesil (green plums) are hard fruits that grow all over Korea on cherry blossoms. They are sour and full of strong citric acid, so for that reason are never eaten fresh but rather used to make maesil-cheong, a fragrant sweetener. Koreans believe maesil have wide-ranging health benefits (they promote energy, vitality, good skin and good digestion) and they’ve been used in traditional Korean medicine for centuries.

Peak season for the highest quality maesil is May and June, and that’s when they are sold all over Korea and around the world, in Korean grocery stores. If you can’t find any, you can also buy mesil-cheong on Amazon
