Galchi (beltfish)

Galchi is one of Korea’s most popular fish along with mackerel, saury, and pollock. This fatty fish is very soft and fatty and you can braise it, make soup with it, or simply grill it. It’s long and slender and resembles an eel but has delicate, sweet white flesh.

Look for beltfish in Asian fish markets or at the fish counter or freezer case of Korean grocery stores. Mackerel is a good substitute.
