Of all the different kinds of salt available, I prefer Kosher salt and I use it every day. If a recipe on my website calls for salt, that means Diamond Crystal Kosher salt. I like it because it has a salty, clean taste, and the grains are pretty like snow. They’re not too fine and easy to grab and sprinkle while I’m cooking or making kimchi.

Diamond Crystal Kosher salt is readily available to me here in New York City. If you can’t find it, use what you like or whatever is available to you. Sea salt or table salt are fine but you’ll need to adjust my recipe a to accommodate for the different grain size.
