Hi, my boyfriend is korean and his mom made us a few side dishes this summer to take home. Unfortunately, 콩자반 & 오이 장아찌 are going to run out soon, and I was wondering how I can make these two side dishes on my own and if it matters what kind of cucumber I use? Thank you!

oh okay thank you! I wasn’t sure if they were the same, or not. Although the stuffed cucumber kimchi is a little different than the one i have at home now, it’s not stuffed. But I will try it next time I buy cucumbers, thank you!
