I first tried Kimchi about two years ago and it grew on me pretty quick. I love the stuff! I just made my second batch. First batch was way too heavy on the red pepper. This batch is still kickin' but not as bad. I used a half cup of red pepper flakes and a whole small ginger. It's in a big pickle jar so it will take a few days to ferment properly. GOD I LOVE THIS STUFF!
