I first tried Kimchi about two years ago and it grew on me pretty quick. I love the stuff! I just made my second batch. First batch was way too heavy on the red pepper. This batch is still kickin’ but not as bad. I used a half cup of red pepper flakes and a whole small ginger. It’s in a big pickle jar so it will take a few days to ferment properly. GOD I LOVE THIS STUFF!
Cool man, this stuff rocks. I saw a show on “Dirty Jobs”, where that Mike Rowe dude went to a kimchi factory. That got me interested, it sounded good.
I just made my first batch of kimchi tonight using the “Easy” recipe, I followed it pretty closely. Quantities on some things were not exact, but I did use 2.5 cups of red pepper powder, it kinda’ scared me when I was puting it in, but it’s perfect. I’d even like it a touch hotter but it’s good enough to not need any tweaking.
