I recieved the most wonderful book on Kimchi for Christmas and many if the recipes call for korean watercress. Is or Amercain watercress the same thing? thanks.

Korean watercress is called Minari. Link to info: https://www.maangchi.com/ingredients/water-dropwort
Amercain watercress is close but not the same. If you can get the real thing I recomend using the real thing. My wife will not use the American kind but I do some Koreans that use it is some dishes.
Agujjim is a dish that I would only use Minari.
Which book did you get? I have “Good Morning Kimchi” and love it.
Now if I could just get some Minari seeds!

The book is called KIMCHI A KOREAN HEALTH FOOD by Florence C. Lee and Helen C. Lee. It a wonderful cookbook that is available on Amazon.
If I can’t fing Korean Watercress is there a close American sustitute?

After looking at the index I have added that book to my wish list for my next Amazon order.
I think that the American watercress is about as close as you will get. But I would take off the leaves and only use the stems.
Perhaps M can give some more insite.
