Hi,
I am entering medical school in a city that is ~5 hours away from my hometown. That means that I’m going to be cooking for myself. I was wondering if you can provide any quick, nutritious, meals. The twist is that I am a vegetarian (eggs are okay, but no meat or fish). I really like the Korean food I’ve had so far, so I wanted to incorporate more and more recipes into my life.

I’m not sure if this counts but what I love to do is make a steaming hot bowl of white rice, peel half of a nicely ripe avocado and mix it with a bit of soy sauce and a small pat of butter. Delicious and very savory/filling and ultra fast to make. Just use a microwave if the rice isn’t hot.
Of course, eat this with kimchi or your favorite side dishes.

a simple soup made by stewing some veggies and tofu, along with a poached egg, in doenjang is a killer breakfast that lets you kinda use whatever you feel like. I used miso in my case but ate that every morning for about a month once. works great since you could even microwave it or use a water kettle if need be.
