I always have this starch extracted from potatoes on hand because it’s essential for achieving the supreme crunchiness for fried dishes like Korean fried chicken. I also use it as a thickener. I’ve never found any potato starch that worked better than Korean brands for this purpose. Seal the package well and store in a cool place.

    For the potato starch powder, can we use regular potato starch from the different store and not from the Korean store?? It’s for the yangnyeom-tongdak dish.

      Potato starch and tapioca starch are different. It depends on what you make.

    May I ask you, the potato starch that sell in korean store, is it the same with “katakuri-ko starch” which is potato starch that use in japanese dessert recipe, for dusting (such as dusting the rice cake daifuku, the sweet rice cake that have red bean inside, and using katakuriko starch/potato starch for dusting out side)?
    When we do sweet rice ball with red bean inside (your recipe), Can we use korean potato starch for dusting rice cake instead of roast soy bean powder?

      no, no, no! You make potato dish which contains lots of potato starch in it, then add more starch potato to it? : )
      Just skip corn syrup and use honey or sugar.

    Did you get it at Korean grocery store? Then it must be potato starch powder. It’s translation mistake. I bought the same thing a while ago! It’s definitely potato starch powder.

    You can use potato starch for many dishes. It never goes bad, just keep it in an air sealed container to use next time. When you make stew, if you like to make your stew sticky, you can use it. Check out my black bean noodles recipe. I am showing how to use it.
