Green chili pepper and bitter melon kimchi

I tried making Spicy stuffed green chili pepper kimchi
Gochu-sobagi and I also make bitter melon kimchi. I follow the Maangchi’s recipe but I added some fried baby anchovy in the kimchi mixture. The result is great! You can taste salty bit from the baby anchovy while enjoying the crunchy peppery taste.
For the bitter melon, I rub coarse salt and leave it for 5 hours to make it tender and to balance the bitterness…the end result is rich in all taste! you got the bitterness, sweet, spicy and salty bit from baby anchovy…
