I live in Kansas so Kimchi is something not heard of much here at all but my family loves it so much that it has spread to other families and a lot of friends who think its wonderfull. Used to only make 1 gallon batches for myself but since then i have had to increase my batches just a little lol. Here is my 35 gallon kiddie pool filled with the cut cabbage just after i added the salt. Used 12 large heads of cabbage in this batch. Pretty sure this will only last about a month lol.
I changed the recipe a little bit from what was Maangchi’s original because i cant find any good squid or oysters here to use so i use salted raw shrimp instead. The recipe is the same otherwise. And always fantastic !

But we have some friends that we also give it to and a neighbor that recently moved in that was from N. Korea. She says it tastes just like her childhood at home. I seem to be spreading the Kimchi addiction everywhere i go. Its a lot of fun.
Plus i have found it makes a great addition to a salad, as well as a lot of other things i have come up with. Try Kimchi with Cottage Cheese, sounds odd but delicious.
