<description>&#60;p&#62;I've been silently following maangchi's recipes and learning how to make Korean food. I am Korean and I love to cook. But because my mother doesn't make most Korean foods, I never learned how to make Korean food, and I wasn't even familiar with most Korean foods. I get introduced to korean food by visiting my friend's house and taste their mom's cooking. My brothers are begging for Korean food all the time so whenever I go there, I try to learn a new Korean recipe from Maangchi and experiement on them. They are very very grateful to you Maangchi for teaching their sister how to make authentic Korean food. And I'm so grateful that you make it so easy to follow. I have all your videos on my iphone and study them while I work out or ride on the bus. HAHA.  You saved my Korean cooking life! Thank you so so much!  xD

<description>&#60;p&#62;Wow it was delivered frozen? Will they take it back?&#60;/p&#62;
&#60;p&#62;When you cut open tofu that has been frozen you will see large holes in the tofu - looks kind of like bread, rather than the fine texture you normally see. The taste is chewy, and rather grainy. It therefore doesn't work so well in normal korean tofu dishes. It might work for any dish in which you are going to break it up and mix with something else - like in mandoo.&#60;/p&#62;
&#60;p&#62;I have used frozen tofu in the past to mix into a mixture of chopped mushrooms when I wanted to emulate meat in a vegetarian casserole, and its not bad as a meat substitute in a chinese stir fry because the chewiness is satisfying to meat eaters, but for the most part the texture will not work well in most korean recipes.&#60;/p&#62;
&#60;p&#62;I hope you can return it, or you don't have a large amount! I would have a serious talk with your supplier!&#60;/p&#62;

<description>&#60;p&#62;Freezing tofu absolutely destroys the texture (I speak from unfortunate experience).  However, it resembles the texture of tofu skin, so you can actually still use it in stir fry dishes, or marinated in sweet sauce (similar to the taste in yubu chobap).&#60;/p&#62;

I ordered Tofu from my vendor and it was delivered frozen.  Does this make a difference in the outcome of you meal.  I the market I have never paid any attention to availability of frozen tofu. Any thoughts?

It is apparently also a food science text denoting what food combinations are nutritionally advantageous, and why certain flavors are considered optimal. If you are interested perhaps we can come to an arrangement. I can send you the book if you pay for shipping, and you send me translated recipes.&#60;/p&#62;
&#60;p&#62;Let me know. The book is about 8 x 10 x 2.5 inches and 730 pages. It is called the &#34;Home Cooking Encyclopedia&#34; and looks to have been printed in the 1950's or 60's. There are some color photos in the beginning, and some black and white photos in the body of the book.&#60;/p&#62;
&#60;p&#62;I don't know if this is too old to interest you, or if you don't want to translate.&#60;/p&#62;
&#60;p&#62;If that is the case, and someone else is interested, Maangchi perhaps? Let me know.
