<description>&#60;p&#62;Hi Maangchi. I've noticed that you don't really use Spam in your recipes. Is it a personal preference because you don't like Spam? Spam is so widely used in many of the Korean dishes. I cannot have Kimchi Jjigae, Kimchi Bokkeum Bap, Budae Jjigae without Spam. It seems like Koreans made Spam their own over the years, since the Korean War. And what is considered a &#34;trashy&#34; food item is rather a prized ingredient in Korean cooking. I even blogged about Spam. &#60;p&#62;I am Vincenzo from Italy but currently living in the Netherlands.&#60;br /&#62;
I spend the last two summer in South Korea and I fell in love with the culture, the language and of course, the food!&#60;br /&#62;
This August I did a road trip with a korean friend of mine and we collected a lot of material and information about korean food, by trying many different dishes in several places across the country.&#60;br /&#62;

The taste is really good, but the aftertaste is really bitter :(&#60;br /&#62;
Will the bitterness go away when the kimchi ferments?

<description>&#60;p&#62;My first post in this Maangchi so please be patient. I suppose I should start with a quick intro and some general background information about me. &#60;/p&#62;
&#60;p&#62;I've always been into Korean culture and music since I was a early adult. AS I got more into Korean stuff eventually I really got into the food and omg just as awesome Korean media is so is the food just as much!! &#60;/p&#62;
&#60;p&#62;Returning from my first trip to korea this past summer I came back tasting so many different kinds of foods. My tongue was spoiled because I tasted only the best Korean food that exists, in the home country!! However returning to the States I wanted to continue eating the same Korean food I ate in Korea but Korean food here is so expensive. I can't speak for all places in the U.S. but at least here in the Bay Area its definitely on the pricey side. &#60;/p&#62;
&#60;p&#62;So then I started my quest to learn how I can make similar dishes to some basic Korean dishes I love to eat so I could spoil my tongue even more and eat it more often, while saving money! ^^  So far I only cooked Soon Du Bu JJigae and Japchae and following this website I was quite successful. Actually normally I don't cook much but with a burning passion to eat more Korean food I learned how to make my first two dishes! And I'm nowhere near the end of my journey. ;D

<description>&#60;p&#62;Amazon.com sells a number of Korean products that you can have shipped. You can go to the Grocery and Gourmet food department and search for Korean foods. You can also type the name of the type of product you want. For example; soy sauce, sesame oil, kochujang....  I looked for duenjang and they didn't list that, but Korean fermented soy bean paste - did the trick.&#60;/p&#62;
&#60;p&#62;There are a LOT of prepared foods that I have no idea of the quality of, and some foods that are not korean, but if you follow Maangchi's recipes and buy the korean ingredients to make your own you will probably be better off. But that of course is your decision.&#60;/p&#62;
&#60;p&#62;For example there are prepared &#34;Korean Barbecue Sauces&#34;. You would be better off making your own each time you need so there are no preservatives, etc.&#60;/p&#62;
&#60;p&#62;And a suggestion - If you want to stay friendly with you post office, DO NOT have kimchi mailed to you.  One broken package, and you won't be on good terms with them!&#60;/p&#62;

&#60;p&#62;I'm Emilie and I'm from Canada. I looove everything about Korea; K-Pop, K-Dramas, food, language, etc. I made some Korean dishes but nothing really elaborate because where I live, I can't find any of the basics korean ingredients to make those delicious dishes. The nearest Asian grocery store is at 7 hours hours(!!!! :O) from my home and the only ingredient I could find was 고추장 (hot pepper paste). I cannot do many dishes with only this, so I was wondering if there would be someone out there who lives in Korea or near a Korean grocery store and who could buy for me and send to me all the ingredients I need to make Korean food??? And then I would pay everything back to him by paypal. &#60;/p&#62;
&#60;p&#62;If someone could do that for me, that would be soooo nice and awesome. I did not know where to ask this so I made a post here but if anyone thinks this is inappropriate, I will erase this.&#60;/p&#62;

Whenever I cooked a new dish for my family to try and they like it, I feel so happy and contented. Recently just found a new interest in bento-ing and still learning that's why I started blogging and made a lot of new friends of the same interest :)&#60;br /&#62;
I came to know about Korean food during the period of time when I'm crazy over Korean Dramas which was about more than 6-7yrs back! the 1st Korean food that attracts me is the Bibimbap because of its vibrant colors and the way those Korean celebrities ate Bibimbap in the shows made me droops! LOL. Was wondering how it taste like until a day when I saw a Korean food stall in a food court with my family, I ordered without hesitating. YUMMY! It was really good! All of us like it so much! My elder girl can finish almost everything all by herself! From then on, whenever we had meals in a food court, I'll sure look for the Korean stall. I love the kimchi, ginseng chicken soup and the beef too!&#60;br /&#62;
I just cooked my own Bibimbap few weeks ago when I saw the supermarket launching out new Korean products. After that I found Maagchi's blog, ALL ABOUT KOREAN FOOD &#38;amp; RECIPES! Hooray! I can cook more Korean food now! :D

<description>&#60;p&#62;Based on what my non-Korean friends enjoyed whenever I took them to Korean restaurants, I'd say get some mandu or seafood pancake as an appetizer and try the bulgogi or bibimbap if you're not wanting to be too adventurous. My friends found most of the stuff to be too spicy, but really enjoyed the meats and the various banchan.

My wife and I both love Korean food, but never really learned how to make some of the more &#34;advanced&#34; items. The Korean cookbooks are rather never precise in the steps, and a lot gets lost in translation. Maangchi manages to demystify Korean cooking -taking it out of the hands of our mothers and putting it on Youtube and this site. &#60;/p&#62;
&#60;p&#62;Because of this site, we are cooking more Korean food, and I believe eating more healthy food. Thank you Maangchi and Maanseh! (Ten thousand years!)&#60;/p&#62;

<description>&#60;p&#62;The use of paprika likely had something to do with it. The flavor of paprika is very different from the flavor of the Korean pepper flakes. Lower quality or stale paprika can often have a bitter taste as well. Check out some websites that sell Korean food/spices.  The Korean pepper flakes usually don’t cost much and are worth buying.

<description>&#60;p&#62;I tried to make homemade kimchi for the first time today using maangchi's &#34;easy kimchi&#34; recipe.  everything looks beautiful except:&#60;br /&#62;
1. I didn't use the squid&#60;br /&#62;
2. I couldn't find korean pepper flakes so had to settle with my mom's red pepper powder (paprika?)&#60;/p&#62;
&#60;p&#62;anyway I know maangchi said you could eat it right away or let it store in the fridge if you wanted it to become sour..storing it outside will let it ferment faster..I let it store in the fridge and after about 1 hour in the fridge I wanted to taste it.  of course it wasn't sour yet ( I think maangchi said if you keep it in the fridge it should take 1 day to ferment and get sour?) but it was also a bit bitter and grainy.  will this just go away once it has properly fermented in a day or so?&#60;/p&#62;
&#60;p&#62;I'm worried that it was due to my using the wrong kind of pepper powder :(  I put a lot of effort into making this and it did take 2 hours and a half lol&#60;/p&#62;
