      Mee Hoon Kuay is a traditional Chinese ‘noodle’ soup, and is well-loved and popular among Singaporeans. The ‘noodles’ are actually pieces of dough made with plain flour and water. Nowadays, the dough pieces are made using machine whereby the dough is pressed flat and the flattened dough is cut into square pieces using a knife. Home-made mee hoon kuay, however, are made by tearing the dough using hand, just like sujebi. Traditional Mee Hoon kuay is simple to make and it’s best on a rainy day!:)

      Mee Hoon Kuay (serves 2)

      Ingredients : plain flour, vegetable oil, salt, water, soy beans (Soaked overnight),dried anchovies (Small ones), baby spinach (100g), boneless chicken breast (100g), sesame oil, soy sauce, oyster sauce and pepper.

      Directions:

      For dough,

      1) Combine 2 cups flour, 3/4 cup water, 1/2 TBS vegetable oil aand 1/2 ts salt in a large mixing bowl. Knead till the dough is soft and does not stick to your hand. Keep in a plastic bag in the fridge.

      For stock,
      1) Place 10 cups of water in a pot. Add 1/2 cup of soaked soybeans and 15 small dried anchovies (head and guts removed). Bring to a boil for 15 mins over high heat and turn to low heat and let it simmer for half an hour.

      2) Turn off the heat and remove anchovies.

      3) Cut chicken breast into thin slices and marinate with 1 TBS sesame oil and 1 TBS soy sauce and 1 TBS oyster sauce.

      4) Add sliced shicken into the pot and boil for 5 mins.

      5) Add 1 ts salt to taste.

      For noodles,

      1) Put the dough in your left hand, and pull and stretch it with your right. Get it as thin as you can. Then tear it into bite sized pieces with your right. Drop it into the boiling soup. Repeat this until the dough runs out.

      2) Add baby spinach and close the lid. Cook for 5 mins.

      3) Open the lid and sprinkle some pepper powder.

      4) Transfer to individual bowl and serve hot. (Do eat all the soy beans in the soup, they are tasty and good for your health!)

      As for myself, i eat my mee hoon kuay with a chilli condiment i make myself. Its optional but its highly recommended for people who loves spicy food! It’s recommended that you prepare this condiment before you start cooking the mee hoon kuay.

      Ingredients for condiment: 3 chilli padi (very spicy small red chilli) , 5 cloves garlic, 1 TBS lime juice (or you can use rice vinegar if there’s no lime juice), 2 TBS soy sauce and 1 TBS sugar.

      Directions:
      1) Grind the chili padi and the garlic into a paste.

      2) Add the lime juice, soy sauce and sugar to the paste and mix thoroughly. (You can add more or less of each seasoning according to your own liking.

      3) Serve with the piping hot mee hoon kuay. Enjoy!
