Maangchi, could you teach us how to make 부대찌개? I ate this once in seoul and it was divine!!!

oh, I’m not a big fan of budaejjigae because it uses ham and sausage in the stew, but so many people have requested the dish so far. I’m going to post the recipe later!

my shortcut to making Bu-Dae-JiGae is like this…..
Use Maangchi’s Kimchi stew recipe but use 12 inch pan and add little less water if you like it spicy and add more kimchi liquid and hot paste. Once I feel the kimchi stew is close to being done….other ingredients I would include in the kimchi stew to make Bu-Dea-JiGae are spam, beef hot dog sausage, and sweet onions….let it simmer for 5 to 10 minutes and lastly add green ontions and one package of udon noodle or just plain ramen noodle or even douk (douk used for douk-bo-ki). Quantity is pretty much to your discretion. Bu-Dae-JiGae should be much spicer and less liquid than Kimchi stew. Hope this helps. This definitely won’t be true Korean Bu-Dae-JiGae @ Seoul but close to it.

Maangchi- I have a wonderful Budea Jjigae recipe and I substitute turkey meat for the ham and pork and beef. I also use chicken broth instead of beef. It is still wonderful! Thank you so much for the wonderful recipes you bring us!

Maangchi- So sorry I didn’t respond. I forgot that I made a post and didn’t check. LOL!! But here is my recipe:
1 can Turkey spam, 1/4 lb turkey burger,1 large turkey sausage or 2 turkey hot dogs, chicken broth, veggie baked beans, 1 tbl minced garlic, red pepper past, 1/2 sliced cabbage or 1/4 kimchi, noodles, 1/2 large onion, 1 cup bean sprouts, 1 sliced shitake mushroom, 2 sliced scallions, 1 sliced red pepper, 1 1/4 cups sliced rice cakes, 1 tbl ground red pepper.
Slice and chop everything
in a large pot
turkey burger, spam, baked beans, onion, cabbage or kimchi, mushroom, sliced pepper, bean sprouts, sausage or hot dogs, and cover with chicken broth. Boil 10 min.
in a bowl mix red pepper paste, garlic, ground red pepper, and dash of salt. Add to the boiling pot then the scallions and rice cakes. Boil another 10min. Add the noodles and cook 2 min. Take off heat and enjoy!
Hope you like this and and feel free to change whatever you don’t like. I got the original recipe from http://www.eatkimchi.com which no longer exists and I modified it from the beef and pork to chicken and turkey.
