Me and my wife were at H-mart in Dallas and they had lots of great looking Korean peppers on sale. So I bought a bunch of them. I also bought some salted anchovies for making this. The salted anchovies do have lots of icky factor. To avoid that you could use more anchovy sauce.
Korean Pepper Kimchi
3 pounds Peppers
½ cup anchovy sauce
½ cup salted anchovies
3 tablespoons crushed (or chopped) Garlic
2 tablespoons ginger
Put the above into a food processor and blend into a paste.
To the paste add ½ cup red pepper flakes (gochugaru) and mix.
Rub some of the paste onto the peppers. Give the peppers a nice soothing massage in the paste. Then put them into your container.
Put any leftover paste on top and mix in. Store in your fridge for at least a week
