This morning I made hobakjeon with zucchini for my brunch. A whole zucchini cut into thin matchsticks is inside this pancake! A thin crispy zucchini pancake with a little bit of toasted sesame oil always brings back good memories.

“It’s raining outside and there is nothing much to do, why don’t we make hobakjeon or sujebi?”

If you have a nice looking zucchini in the fridge: “Yes, I can make hobakjeon!”

You don’t need many ingredients to make it, and today is very cloudy in New York, so it’s the perfect day for it.
