Hoddeok with Pumpkin Cajeta filling and pecans

I made filling for pumpkin cajeta empanadas and made hotteok using Maangchi’s recipe. They were delicious and the filling was easy to work with. If you like pumpkin and caramel, you will want to give these a try. I prefer hotteok the traditional way, but this was a fun and yummy experiment. I would make these again.
