It is a real delight to have this fresh salad in the middle of the winter!
I’ve had issues with my winter kimchi this year (a second fermentation at room temperature was necessary to fix it) consequently, it ferments very quickly and it’s now too riped for eating as is.
Geotjeori with lettuce is a great replacement, as described in the introduction of the recipe.
I plan to do it again tonight as a side dish for jjajangmyeon.
It looks great! Jjajagngmyeon and lettuce salad sounds a great meal!
