Thanks again for another great side dish Maangchi! I substitute bitter melon instead of the cucumber. I’ve discovered that the bitterness of the melon is removed when it is seated with the salt. So, the final outcome is the bitter melon is not bitter anymore and goes perfectly with the taste of the mung bean sprouts. Amazing! I can’t wait to introduce this dish to my wife who is a vegetarian.
