Vegetarian New Year Japchae

During New Year’s eve my boyfriend and I decided to have a luxurious three course dinner. And of course, since we had a celebration, we decided to make Japchae as our main course. But we did some adjustments. Both of us are vegetarians, so we cut some tempeh together with the shiitake mushrooms and the bulgogi marinade. We also added some ginger marinated baby corn (to add some yellow stuff) and garlic sautéed enoki mushrooms (to add some white stuff). The result was pure deliciousness! Thank you so much for sharing this recipe, so we could make it ourselves!
