Quadruple veggie japchae!

I recently made a quadruple batch of Maangchi’s amazing japchae recipe for a potluck dinner. This bowl is nearly two feet across! I left out the beef and egg this time, and added lots of fresh veggies, to make it a main course vegan dish. I used three big bags of spinach, four sautéed zucchini, a few pounds of blanched broccoli florets, three onions, three carrots, three packages of fresh crimini mushrooms and a lot of marinated rehydrated shiitakes. It was so delicious— everyone loved it!
