Vegetarian Kimchi Sundubu-Jjigae

Everything is plantbased here except of the poached egg (I didn’t expect to make it poached, but that’s how it beautifully turned out). Instead of anchovies in the stock, I boiled up some shiitake mushrooms and miyeok. Instead of pork, I added some fried tofu (so both fried tofu and soft tofu here). My home made kimchi is also vegan. This is such a perfect dish for cold winters. Especially here in Sweden during January!

    You made your own vegetarian soondubu jjigae! It looks very delicious and I love the green onion presentation! : )
