Yesterday’s afternoon was too hot that I wanted something cold for my lunch. I immediately thought of bibimguksu, and started doing it! I was happily preparing the ingredients until I found my cucumber rotten in the fridge. Disappointed, but then the sight of apple made me happy! Yeah! I substitute cucumber with apple and it still tasted nice! Definitely gonna do it again!
And my the japchae is made by my sister for today’s dinner. Awesome looking, isn’t it? =D

I find it difficult to keep cucumbers on hand, they go bad so quickly! It makes me feel better that the legendary Maangchi has this problem sometimes too :) But today, my bibimguksu has a nice big cucumber!
